FODMAP — Modify
Use firm banana, lactose-free milk, and gluten-free flour.
Ingredients
Dry
- 2 cups flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ¾ tsp salt
Wet
- ½ cup oil
- ½ cup milk
- 2 eggs
- 1 tsp vanilla
- 1 cup mashed banana
- 1 large orange, juiced
Optional
- ½ cup crushed peanuts
Method
Mix and bake
- Mix dry ingredients, then add wet (stirring in the same direction).
- Bake at 180–200 °C.

- Muffins: 15–30 min
- Cake / loaf: 30–60 min
