FODMAP — Modify

Use firm banana, lactose-free milk, and gluten-free flour.

Ingredients

Dry

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¾ tsp salt

Wet

  • ½ cup oil
  • ½ cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup mashed banana
  • 1 large orange, juiced

Optional

  • ½ cup crushed peanuts

Method

Mix and bake

  1. Mix dry ingredients, then add wet (stirring in the same direction).
  2. Bake at 180–200 °C.

  • Muffins: 15–30 min
  • Cake / loaf: 30–60 min
