A staple Filipino dish where tender cuts of beef are simmered in a marinade of soy sauce and calamansi juice, topped with thick onion rings.

FODMAP — Modify

Replace onion with spring-onion greens; use garlic-infused oil.

Ingredients

Beef

  • 350 g thinly-sliced beef (sirloin, top round, flank)
  • ½ red onion, sliced into rings

Marinade

  • ¼ cup soy sauce
  • 1–2 tbsp calamansi juice, to taste (or lime juice / vinegar)
  • 3 garlic cloves, minced
  • 1 tsp sugar
  • ¼ tsp ground black pepper

Method

Marinate

  1. Combine the beef, soy sauce, calamansi juice, minced garlic, sugar, and black pepper in a bowl.
  2. Gently massage the marinade into the meat until evenly combined. Cover and let marinate for 30–60 minutes.

Cook the beef

  1. Heat oil in a pan over medium heat. Squeeze excess marinade from the beef and fry for 3–5 minutes until just cooked through. Work in batches to avoid overcrowding. Set aside.

Build the sauce

  1. In the same pan, add the onion rings. Cook for 5–10 minutes until they soften and become translucent.
  2. Pour in the remaining marinade and the slurry. Mix to create the sauce.
  3. Return the beef to the pan and toss to combine.

Serve

Serve with a side of rice and veggies.
