Ingredients

  • 4–6 large lettuce leaves (iceberg or butter)
  • 100–150 g turkey deli slices
  • 3 tbsp cream cheese, softened
  • 1–2 chipotle chillies in adobo (from the jar), finely chopped, plus 1 tsp of the sauce
  • 2 spring onions, thinly sliced (greens and whites)
  • ½ punnet cherry tomatoes, halved
  • Squeeze of lime (optional)
  • Cracked black pepper

Method

  1. In a small bowl, mash the cream cheese with the chopped chipotle and adobo sauce until streaky-smooth. Taste — add more chipotle for heat.
  2. Lay out the lettuce leaves on a plate or board.
  3. Smear a generous spoon of chipotle cream cheese into each leaf.
  4. Layer turkey slices on top (fold to fit), then scatter cherry tomatoes and spring onion.
  5. Finish with lime juice and pepper. Eat with your hands.

Lettuce choice

Butter lettuce holds the filling without cracking. Iceberg gives crunch but splits — use the inner cup-shaped leaves.
