FODMAP — Modify

Use lactose-free milk and gluten-free flour.

Ingredients

Batter

  • 1 egg
  • ¾ cup milk
  • 2 tbsp margarine, melted
  • 1 cup flour
  • 1 tbsp sugar
  • 3 tsp baking powder
  • ½ tsp salt

Method

Make the batter

  1. Beat the egg until fluffy.
  2. Add the milk and melted margarine.
  3. Add the dry ingredients and mix well.

Cook

  1. Heat a heavy griddle or fry pan greased with a little butter on a paper towel.
  2. The pan is hot enough when a drop of water breaks into smaller balls and dances around the pan.
  3. Pour about ¼ cup batter into the pan and tip to spread (or spread with a spoon).
  4. When bubbles appear on the surface and begin to break, flip and cook the other side.
