Ingredients
- 1–2 slices sour rye bread (or any good crusty bread)
- 2–3 tbsp spreadable goat cheese
- 6–8 cherry tomatoes, halved (or 1 truss tomato, thinly sliced)
- Olive oil, good quality
- Flaky salt and cracked pepper
- Fresh herbs if you have them — basil, thyme, or chives
Method
- Toast the bread until deeply golden — you want it crisp enough to hold up to the toppings without going soggy.
- While still warm, spread thickly with goat cheese.
- Top with tomatoes — cut-side up if using cherry tomatoes, so they show off.
- Drizzle with olive oil, season generously with flaky salt and pepper.
- Scatter herbs over the top if using.
Bread matters
A dense, slightly sour bread (rye, sourdough) is the right base. Soft sandwich bread will collapse.
Variations
- Add a smear of fig jam under the goat cheese for a sweet-savoury version — works especially well with truss tomatoes.
- Swap goat cheese for cream cheese if you’re using that up instead.
- Top with a slice of turkey deli for protein.
