Ingredients

  • 1–2 slices sour rye bread (or any good crusty bread)
  • 2–3 tbsp spreadable goat cheese
  • 6–8 cherry tomatoes, halved (or 1 truss tomato, thinly sliced)
  • Olive oil, good quality
  • Flaky salt and cracked pepper
  • Fresh herbs if you have them — basil, thyme, or chives

Method

  1. Toast the bread until deeply golden — you want it crisp enough to hold up to the toppings without going soggy.
  2. While still warm, spread thickly with goat cheese.
  3. Top with tomatoes — cut-side up if using cherry tomatoes, so they show off.
  4. Drizzle with olive oil, season generously with flaky salt and pepper.
  5. Scatter herbs over the top if using.

Bread matters

A dense, slightly sour bread (rye, sourdough) is the right base. Soft sandwich bread will collapse.

Variations

  • Add a smear of fig jam under the goat cheese for a sweet-savoury version — works especially well with truss tomatoes.
  • Swap goat cheese for cream cheese if you’re using that up instead.
  • Top with a slice of turkey deli for protein.
